Chef Allan Mertola, who is called as Chef A, rises from being an apprentice to becoming an executive dimsum chef. Though a graduate of Computer Programming, Chef A strived to learn the art of dimsum cooking. He took-up short culinary course after finishing his prior course while working as a helper of a Dimsum Chef in a Chinese restaurant in Manila. Being a helper didn't stop him from pursuing his heart's passion, thus, it became his training ground to develop his skills in mastering dimsum cooking and making it as his "kitchen-boot camp". At the age of 17, Chef A have already mastered cooking dimsums. His innate skills in cooking could be traced from his mother as she is also a Chef, and making it as a way of raising their family. Because of his sincere devotion, hard-working attitude, and passion, Chef A became a Dimsum Chef at EDSA Shangrila Hotel for four years. Later on, he became Head Chef at Shitamachi Ramen Philippines that lasted for three years. He had been invited for a TV guesting at Unang Hirit and Umagang Kay Ganda, and also a participant on Showtime's Trabahula. He is also had his appearance as a guest in one of the shows at PTV 4 and UNTV. At present, Chef A is a Dimsum consultant of different restaurant in the Country and supplier of dimsums to different five star Hotel and Airlines. He is a co-owner of Hokkian Kitchen Co. and owner of Chef A Dimsum Palace. To share his expertise in dimsum cooking and to help aspiring dimsum chefs, he also became an invited instructor in several workshops around the country.
